so what’s in a salad?

Fresh-air markets, booths and stalls stretching for blocks and blocks, wooden tables piled high with newly-picked fruits and vegetables.  Luscious juice-sweet fruits, all round-body shapes and colors. Rustic root or bright green vegetables some with the earth still clinging to them. Farmers in aprons, their hands, soil-worn and calloused, paring off samples for us to taste. And we held out our hands and we tasted, and we bought what we couldn’t resist. But we’d made some kind of cosmic mistake! We had no kitchen to take our booty to, no salad bowl, no wooden tongs. No aprons of our own. So it happened that everywhere we went, my longing for brilliant color tossed in a bowl grew. We had some nice salads while away, but they weren’t the salads of home. And  the salads of home are the foods I miss most of all when we’re away.

So here, for you (and for me) brilliant color in a bowl. (and between us, so delicious it’s startling!)

Once again, as is usually the case with salads around here, a list of ingredients but no amounts. I’ll give some rough guidelines, but you know how you like your salads from home, so no one will be as good a judge as you …

 

Brilliant Winter Green Salad with Pomegranate, Apple & Almonds

Baby Spinach – or Arugula  (which do you prefer, mild and green, or slightly bitter? Or maybe a mix of the two.)

Apple, cored and sliced

Pomegranate seeds (see a previous post for the most ingenious way to remove these wonderfully tart & crunchy little seeds)

Basil – leaves laid out on top of one another, rolled tight like a cigar and sliced thinly

Slivered Almonds, toasted brown

Shallot, sliced thinly and sauteed to a toasty brown in a bit of oil

Soft, mild goat cheese – Optional

Vinaigrette (see below)

Thinly slice the shallot and drop it into a small medium-hot skillet to which you’ve added a small amount of oil. Stir occasionally until browned. Remove to a paper towel.

Toast the almonds – in a 350° oven for perhaps 15 minutes. Check frequently. (The last bit of browning goes very quickly.) About the last 5 minutes you might (might!) want to place the shallots in the oven along with the almonds to dry and crisp them a bit more. 

Remove the seeds from the pomegranate. (See previous post link above. You’ll also find another delicious salad there.)

Toss all ingredients into a bowl (reserving a little of the seeds, nuts and shallots for sprinkling on top.) Toss with a little vinaigrette. Taste to see if amply dressed. Drizzle more as desired. Sprinkle bits of brilliance on top.

Even this time of year, most markets will still have fresh crisp baby spinach leaves. These leaves taste mild and green and like Health itself. (Arugula, a little or a lot, but only for those who like the mildly bitter. I do!) Crisp sweet-tart apple, toasted almonds tasting of the hearth, threads of fresh basil winding throughout (these you nearly taste in your nose), crunchy smoky bittersweet bits of shallot, bursting tart seeds full of juice…and then…if you like this sort of thing…mild and creamy, exquisite white cheese of goat.

green beans in summer

Keeping it simple, keeping it cool.

Fresh, crisp green beans, lightly and barely cooked then chilled. Drizzled with walnut oil. Scattered with toasted walnuts and fresh thyme leaves. Sprinkled with crunchy salt & crumbles of blue cheese. Served with anything off the grill or as one of a trio of summer salads. Simple and cool, like lemonade and a run through the sprinkler, just what we need, just as we need it.

A few secrets to beautifully cooked green beans: 

Lots and lots of water…a big pot full of roiling, boiling water.

Lots of salt…way more than you think you’d need.

quick cooking.

And, unless you’re serving immediately, a good ice-cold bath & toweling off. (the beans, I mean … but it might be just what you need too.)

Why so much water? Because when you drop the beans in, the temperature will naturally drop and will need to return to a boil…that takes far less time the more water you have. Why so much salt? It helps lock in the color AND salted water boils at a higher temperature. (Don’t worry – very little of it will be left on the beans.) As quick a cooking as possible because the longer they’re in hot water the limper and paler they become and the more of their vitamins and minerals they’ll lose. Why the quick ice bath? If you don’t cool them immediately, they’ll continue cooking outside the pot, well beyond their perfect doneness. As usual when presenting vegetables, I’ll leave quantities safely in your own able hands. Here are just a list of ingredients & a few guidelines.

Green Beans in Summer with Walnut Oil, Walnuts & Blue Cheese

Fresh, crisp brightly colored green beans

Walnut oil (so delicious! You won’t be sorry you picked some up if you haven’t already)

Walnuts

Coarse, crunchy salt (like Fleur gris or Maldon) – (See NOTE)

Blue cheese

a few sprigs of fresh thyme

NOTE on salt – if you enjoy salt, you’ll much prefer the crunchy little bits of a coarser, slower-dissolving kind in a dish like this. It adds another element & a distinctive texture to this simple dish.

green salad with blueberries, kiwi & goat cheese

For at least the next several weeks we have a three-part kitchen. The refrigerator is still where it belongs, but next week will be heading to the garage. Our prep space is on a long craft table set up in the dining room in front of the window – where until recently I took photos to share with you. We have the bare necessities there – the sorts of things you’d likely find at a campsite – well, okay, maybe an RV park, minus the generator. The clean up space (and the nearest water) is in our laundry room, about 100 yards (or more) away from everything. That’s also where we keep our espresso machine, because how could we consider going camping without it?

Between the clean-up space and the prep space are some stairs. On this side of the stairs are our dogs. On the other side of the stairs, a demolition crew going in and out the front door. Separating the two, at the base of the stairs, is a dog gate that I climb over with arms full of food, cutting board, salad bowl, etc etc etc. If you had a few minutes and you’re into pratfalls, you’d get a kick out of it. I’m bringing armloads of stuff to my office to prepare a salad and then to photograph it. So as you can imagine, there are a lot of “steps” involved in preparing something around here, especially something to share with people of such enormously good taste as yourselves. A lot of “foot-steps” that is. Apart from that, we’re keepin’ it simple around these parts. Here it is another Wegetable Vednesday and the show must go on!

This morning I headed to another one of Portland’s Farmers’ Markets, and this time I brought big girl camera and cash. This market too is on Portland’s park blocks, but smaller, cozier than last week’s. And, sadly, no fiddles. But there were glorious flowers and loads of beautiful vegetables and herbs to choose from.

I’m kind of a freak for salads, so I head to the greens first. But I’m apprehended by the perfume of fresh bouquets of mint and tender pillowy leaves of basil. And the greens, half of them were shades of purple! How could I resist? Another vender was selling goat cheese. Into the basket. (See those orange beets in the photo above? Those made it home too, but didn’t make it to the salad.) What did make it into the salad: the greens & the purples, the goat cheese, mint and basil, some plump bursty blueberries – and kiwi just ripe, back  at our campsite. They got tossed into a bowl, drizzled with olive oil and (blueberry infused) balsamic. But never mind if yours isn’t blueberry flavored, any balsamic you love will do! A little salt and pepper, glorious! Took a few photos then feasted simple!

things topsy turvy & a new feature at cooking-spree

In earlier posts I’ve alluded to “things about to happen” around our house, but I can explain further now. First there was the joyous birth of our little Drew baby! And even a bit before, and a lot since, we’ve been preparing for a good-sized remodel – two bathrooms and our kitchen.Once work begins on the kitchen, things will get especially interesting. We have a gas grill, and a portable induction burner that’ll hold one pot at a time. And we’ll have boxes full of herbs and spices and plates and forks and knives.

How do I prepare for what has been described to me variously as “completely disruptive”, “awful”, and “just plain hell” (really?!) ? I accept that things will be turned on their heads for a while, and I’ll be here to document it. I’ll photograph the destruction and mayhem.  I’ll play my part in this creative process, from demolition to gleaming completion. I know it’ll be challenging in ways I can’t yet know. But I’m thrilled! And I think I’m ready.

What will it mean here, on these bloggy pages? We’ll discover together. Smoothies? Salads? One pot wonders? Grilled seafood? We won’t go hungry, I promise!

One thing that will make this process less disruptive to food-lovers like us is that Spring is upon us and Summer is coming, and about now Farmer’s Markets are springing up all over the city and in the ‘burbs! Wooden stalls lined with fresh and gorgeous produce, bulging in bright ripeness! The choices we have are exquisitely exhaustive! So, one thing I can predict for the coming months is this: I’ll be carrying my basket to farmers markets, visiting with the growers, photographing fresh-from-the-farm fruits and vegetables and bringing a few choice picks home. Once a week I’ll share my trips with you. We’ll explore old favorites, never-liked and never-tried’s. Most of what will result will be simple, beautiful,  and delicious. And since life around our house will be turned on its head for the next little while, it seemed only fitting to name this weekly feature something like

Wegetable Vednesdays!

and so I have.

(but don’t be surprised to see a few vruits too)

It will be a veritable celebration of things with stems & seeds & roots!

Why not begin with a couple old standby’s and treat them freshly? It doesn’t get more basic than peas and carrots, right?

Well, it could…

~ ~ ~

R a i n b o w    c a r r o t ,  p e a   &   p e a   s h o o t   s a l a d

(about 6 servings)

1½ pounds rainbow carrots (various lengths makes it even prettier)

4 ounces pea shoots (see NOTE)

2 cups sugar snap peas

1 cup snow peas (optional)

¼ cup Meyer lemon juice

1/3 cup extra-virgin olive oil

1 large clove garlic, minced

½ teaspoon kosher salt

¼ teaspoon freshly ground pepper

1 cup crumbled sheep or goat milk feta cheese

¾ cup mint leaves, cut into slivers

For protein, add either

3 cups cooked chicken, shredded

2 cups grilled or poached firm fish, in pieces

1 cup cooked & shelled edamame (fresh soy beans)

NOTE on pea shoots – One market I go to stocks them regularly. You may find them at Farmers Markets or Asian markets too.

 Scrub the carrots gently in order to retain most of their bright outer color. With a mandolin or vegetable peeler, cut thin lengthwise ribbons to make about 4 cups. Discard ends or any tough cores. (What worked best for me was to lay the carrot on the cutting board, holding the thin end of the carrot in one hand and with the other, using a vegetable peeler and a bit more pressure than normal, peel from the small end to the large. I discarded both the first and last strip of each carrot since that was mostly peel.) 

Put dark and light carrot ribbons in separate bowls of ice water and soak about 15 minutes to crisp them up. Drain in a colander and roll in kitchen towels. (or line a salad spinner with towel and spin.) 

Go through the pea shoots, discarding thick or tough stems and tearing sprigs into 4- or 5-inch pieces.

Pull the strings from the straight sides of snap peas (& snow peas if using) and then thinly slice lengthwise.

I have a thing for pears. I didn’t always have a thing for pears. But today my thing for pears is huge. And I think perhaps you need no more of my words on pears, but only to gaze (with your own eyes) upon their shapes, their colors,  their stems, their dimples and imperfections,  to know why it is I have this thing called love of pears.

Of course it’s not all  about their looks. They’ve got that whole flavor and texture thing going on too. Here’s one delicious way to enjoy these beauties. For this recipe, I like d’Anjou or Barlett or Comice – and since you want them to stand up to the heat of caramelizing, begin with under-ripe fruit.

My husband’s got a thing for blue cheese. So, that’s one way you could make this salad (and I did for him) – but just as good (and far better if you don’t happen to like blue) is Parmigiano-Reggiano. Each of these cheeses pairs up beautifully with pears.

I told you in an earlier post about this Olive Oil store near us. (Also on line www.oilerie.com) We were in there the other day to re-stock on our lemon-olive oil. (So good!) Do you think I could walk past the pear balsamic without tasting? Do you think I could walk out of the store without a little bottle tucked under my arm? (oh it was paid for!)  The salad I made for us last night was made with pear balsamic and walnut oil – neither of these are necessary – at all!  Olive oil and any good balsamic will do perfectly. But I had them, and it was good. Very good.

Green Salad with Caramelized Pears, Walnuts & Cheese

with Walnut-Balsamic Vinaigrette

for the salad:

  • arugula or lettuce of your choice
  • walnuts (toasted for 10 minutes approximately, in 350º oven) (or candied pecans or walnuts – see post May 9th, 2011)
  • cheese of your choice (gorgonzola, other blue, parmiggiano – or perhaps you have another in mind)

for the vinaigrette:

  • good olive oil (or walnut oil)
  • balsamic vinegar (infused or not)
  • kosher or sea salt & pepper to taste
for the caramelized pears: (these quantities are for 2 salad servings)
  • 1 pear (see above for varieties)
  • 1 Tablespoon unsalted butter
  • 2 Tablespoons sugar (vanilla sugar if you have it on hand)

Ali’s Summer Salad

My daughter Ali is an enthusiastic, aproned artist in the kitchen, and is all about putting love on the table. She called the other day to say that while at play she’d created a salad she thought I’d like. I’ve been impatiently waiting for my appetite to return because (even while sick) the sounds of this salad set off sweet harmonies and the songs of birds in my head! : )  Last night I was finally able to make it, and once again, the birds did sing!

Ali’s Champange Summer Salad with Chicken, Peaches and Avocado

(serves 4 generously)

Salad Ingredients

  • 2 quarts (8 cups) salad greens – (a salad mix, with some of the spicier, more peppery greens is great – or arugula)
  • 4 boneless, skinless chicken breast halves, cooked and sliced (see preparation options below)
  • 2 firm-ripe peaches, medium-thinly sliced
  • 1 avocado, cut in chunks or thinly sliced
  • 5 ounces fresh goat cheese, crumbled
  • 1/4 cup pepitas (optional)
  • 1 – 2 Tablespoons Lemon Verbena minced (very optional, but wonderful if you have it)

Champagne Vinaigrette Ingredients

  • 1 shallot, minced
  • 1 garlic clove, minced
  • 1 Tablespoon dijon mustard
  • 2 Tablespoon sugar
  • 1/8 teaspoon kosher salt
  • 1/2 cup champagne vinegar
  • 1-1/2 cups canola oil

Options for the Chicken

  1. Quick & Easy – Preheat oven to 350°F. Place breasts on rimmed cookie sheet lined with foil or parchment paper for easy cleanup. Brush both sides of chicken with olive oil and generously sprinkle with coarse salt and a little pepper. Roast for 35-40 minutes (depending on size and thickness, or until chicken registers 160°F on and instant-read thermometer.) Allow chicken to cool to room temperature. Just before combining with other ingredients, slice diagonally across the grain in 1/2-inch slices.
  2. Slow & Scrumptious – Marinating the chicken before cooking using the following marinade (good also for shrimp or any white fish) and then preparing in the oven or on the grill will add more juicy flavor to your chicken.

1/2 cup olive oil
1/4 cup dry white wine
1/4 cup fresh lemon juice
1-2 cloves of garlic, minced
1/4 t. dijon mustard
1 shallot, minced
1/2 t. red pepper flakes
1 t. kosher salt
freshly ground pepper

Combine all marinade ingredients in a gallon-size zipped plastic bag. Pound chicken breasts between 2 sheets of plastic until uniform thickness, around 1/2-inch. Marinate refrigerated for 4 to 24 hours. (Even after several hours, there is plenty of good flavor.) Grill or cook using any method you prefer until internal temperature reaches 160°F. (See #1.)

Champagne Vinaigrette

This makes a LOT of dressing, and you certainly won’t need it all for this salad. But it IS very delicious and if you look, you’ll have no trouble finding other places to use it during the next week or so. (Virtually any combination of greens and fresh summer fruits would likely do very well dressed in this. That being said, you could easily halve this recipe and still have leftovers.) This could well be a dressing you’ll go to again and again. ( It can keep quite well for a week or so refrigerated.)

In a medium bowl combine all ingredients except the oil. Using a whisk, gradually add the oil in a thin, steady stream until creamy.

Tuna Salad Nicoise

If ever I see Salad Niςoise on the menu, my choice might just as well have been made for me. Every other listing on the menu gets obscured behind shower-glass. I can’t quite make it out. Reading glasses don’t help. That’s how much I love Salad Niςoise!

The first time I tried this salad, years ago,  I prepared it myself. Even though as newlyweds we were counting pennies, I was wanting, so badly, a new cookbook – something really amazing to add to my “library” of two.  (Or was it only one?) I’m still kind of perplexed at my choice, because I had next to no experience in the kitchen, but I thought at the time my selection made sense. “Why not start at the top and learn from Julia Child? She has her own TV show!  And she speaks French! She probably knows just about everything.” It was blind luck I suppose that I stumbled upon this salad before trying my hand at (deflating) a souffle, or braising beef tongue for Pot-au-feu (gag reflex), or making oeufs en gélee (poached eggs in aspic, if you can imagine!)   I fear I never would have found Salad Niςoise if I hadn’t happened upon it before the others!  Over the years, it’s undergone a few changes – but nothing major. Some things just possess that kind of status. They’ve earned their place. It’s the sort of thing that you’re a bit awed at the very sight of, you dip your head with respect, allow for a moment of silent appreciation, give in to the smile that’s forcing its way up, then raise two forks and begin! (OK, just one.)  For me, that’s Salad Niςoise. It gets me every time.

Tuna Salad Niςoise

(serves 4 main course meals)

This salad originated in Nice, France. It’s fresh, clean, light, summery, deliciously lemony, a little salty here and there…and is one of those things that’s far greater than the sum of its parts. It’s a composed dish – arranged in any manner that suits the artist – that would be you. The key though is to treat each component in a way that brings out the delicious best in it. The ingredients that are cooked are done so separately, and most are then tossed in a little vinaigrette  before being arranged on the platter. The components of this salad can ALL be prepared ahead of time, put in their own containers, loaded in the cooler and taken on a picnic, then artfully assembled on site! Can’t you just hear Julia now?  “Tres chic picnic!”

I happen to love seared Ahi. Rare. For me, a little satisfies deeply. But, if you don’t have access to it, or aren’t enamored of it, you can use a good canned albacore tuna – when packed in extra virgin olive oil its taste is very good. For years, I bought tuna packed in water, but I’ve learned since that loss of flavor is the price you pay for that exchange. Because more of you will probably opt for the canned tuna, I’ll write the recipe for that. If seared ahi is your preference, I’m assuming you’ll know just what to do – sear in very hot pan one minute or so per side.

Vinaigrette

  • 1  clove garlic, minced (or to your taste)
  • 3 Tablespoon fresh lemon juice
  • 1 Tablespoon wine vinegar (not balsamic)
  • 1-1/2 teaspoon Dijon mustard or 1/2 teaspoon dry mustard
  • 2/3 cup extra-virgin olive oil
  • Salt & Freshly ground pepper to taste
  • Fresh or dried herbs – especially fresh thyme leaves

Make a smooth paste of the minced garlic, combined with the salt. Whisk in lemon juice and wine vinegar. Add mustard. Slowly whisk in olive oil, or place it all in a lidded jar and shake until emulsified.

Salad Ingredients

  • 1 head butter lettuce
  • 1 bunch watercress (optional)
  • 8 plum tomatoes, cut in 1/2 lengthwise, (tossed with 2 T. olive oil & 1 T. balsamic vinegar)
  • 5 – 10 sprigs of thyme or lemon thyme
  • 1- 6 or 7 oz. can of albacore tuna in extra-virgin olive oil (preferably troll caught)
  • 3/4 pounds fingerling potatoes (or small white or Yukon Gold potatoes)
  • 4 hard-boiled eggs, cut in half
  • 1/3 cup (or more) Niςoise olives
  • 1/2 pound fresh green string beans
  • 5 anchovies packed in salt (or a 2-oz. tin of flat fillets in olive oil) – Optional ! 
  • lemon cut in wedges for serving

Serving suggestion: Serve with toasted crusty bread drizzled with olive oil.

I’m about to give you directions for slow-roasting the tomatoes with olive oil and thyme. They’re really delicious this way, and add a different dimension to this salad, but if you haven’t the time, or would just prefer them un-roasted, then skip to the next step.

Roasting tomatoes. Prepeat oven to 300°F. In a medium bowl, toss the tomatoes with 2 T. olive oil and 1 T. balsamic vinegar. Season to taste with salt and pepper. Transfer to a cooking sheet lined with parchment paper and place cut side down, with a sprig of fresh thyme tucked beneath. Bake for 45 minutes or 1 hour, or until tomatoes are “sun-dried” and lightly caramelized. Read more

Greek Salad with Farro

This refreshing salad, with its bright, fresh herbs, crisp cucumber and sweet red bell pepper, its chewy farro, and bits of salty feta,  tastes like summer! It can be the central part of a vegetarian meal, or a side dish for roasted or grilled chicken, or grilled salmon.

Farro is one of those ancient grains making a “come-back,”  showing up on modern grocery shelves. It has a nutty flavor and a pleasingly chewy texture, similar to barley and whole wheat berries (which you could substitute in this recipe if you can’t find farro.) Like many other ancient grains, it’s nutrient-rich.

Salad Ingredients

  • 1 cup farro, rinsed
  • 1 cucumber, peeled, seeded and diced (see NOTE)
  • 1 red bell pepper, cored & seeded, cut in medium dice
  • 1/4 cup red onion, chopped
  • 1/4 cup minced fresh dill or parsley (I prefer the dill)
  • 1/4 cup chopped fresh mint
  • 1 cup crumbled or diced feta cheese
  • 1 cup grape or cherry tomatoes

NOTE: I prefer the long English cucumbers – if you use these, it’s unnecessary to remove the seeds

Red Wine Vinaigrette

  • 3 Tbl. red wine vinegar
  • 1 clove garlic finely minced
  • 1/2 tsp. kosher salt
  • 1/4 cup olive oil

Place rinsed farro in a large saucepan and cover with 2 quarts of salted water. Bring to a boil, reduce heat and simmer, uncovered, for about 30 to 35 minutes. (Farro will have a similar texture to barley when cooked.) Drain it well and set aside to cool completely.

Moroccan Orange Salad with Red Onions & Black Olives

This salad from Morocco is colorful and refreshing, and perhaps unbelievably delicious. If you can be swayed by it’s somewhat unique beauty to try it (as I was), I believe you’ll return to it again and again. I quickly rinse the sliced onions to remove any of their biting sharpness. They mellow almost instantly and the flavors seem to all come together in perfect balance. This salad accompanied our skewered chicken, grilled asparagus and couscous for last night’s dinner. It’s also an excellent accompaniment to hot stews or highly spiced dishes, which is, I suppose, why Moroccans imagined it in the first place. (Recipes for the rest of dinner to follow.)

Orange Salad with Red Onions and Black Olives

(serves 4)

  • 3 fresh navel oranges
  • 1/2 – 1 red onion
  • 1 handful of black olives (12 or so)
  • 2-3 Tbl. olive oil
  • freshly squeezed juice of 1 lime
  • sea salt
  • 1 t. cumin seeds, roasted
  • 1/2 t. Spanish smoked paprika
  • 1 small bunch of cilantro leaves, coarsely chopped
  • Optional: fennel bulb – see below for variation

Roast the cumin seeds on medium-low heat in a small pan. Remove from pan and set aside to cool.   Read more

Why not Kumquats?

One simple salad I simply love has little slivers of bright and tartly fragrant kumquats in it. Have you never tried a kumquat? You should!

Green Salad with Kumquats, Avocado and Pistacios

Ingredients

  • Mesclun, mixed spring greens, or baby spinach (or lettuce of your choice)
  • Avocado
  • Kumquats (see NOTE)
  • Pistacios
  • Dressing – Cilantro-Lime Salad Dressing (in my post Cilantro-Lime Salad, today’s date.)

(You’ll notice that for green salads I don’t list quantities. Only you know how much you or those at your table will eat at one meal.)

Remove your pistacios from the shell. Chop them coarsely, or leave them whole, as you choose. (Or toss some whole ones in, and save the chopped ones for scattering over top.)

Wash and dry your lettuce.

Wash your kumquats, and slice them crosswise, as thinly as possible, removing the seeds as you go. (Yes, you DO eat the peel! In fact it’s all about the peel. Kumquats have been called the inside-out fruit – all the sweetness in the peel, the sour in the flesh.) For a salad feeding two, I use about a handful of kumquats.

Slice or chunk your avocado.

Combine your lettuce, the avocado, and kumquats in a salad bowl. Dress lightly with Cilantro-Lime dressing. Scatter with pistacios and serve.

NOTE: If you’re undecided on whether to try kumquats, I understand your hesitation, but maybe this will help: they’re little ovoids, somewhat smaller than a pecan; they manage somehow to be both hinting of sweet and smacking of tart; they smell vaguely like a daphne blossom, which is, if you didn’t know, heavenly; and they’re highly cute. What more could you ask for in a tiny fruit?
